Frozen Mojito Cocktails
This cocktail can’t help but scream out “SUMMER”!
The mint in our garden is going crazy at the moment, so we have been going “beyond the call of duty” to use it, especially in this classic summertime combination of fresh mint, tangy lime, brown sugar and rum! Enjoy!!
(Serves 8-10)
80-100g (4-5 tbsp) brown or demerara sugar, or to taste
1/2 cup mint leaves
3 limes, skin & pith & seeds removed
120ml (1/2 cup) fresh lime juice
300ml white rum (Havana Club or Bacardi), or to taste
ice cubes (Thermomix – 500g)
500ml soda water, or to taste
Garnish with mint leaves and lime wedges, to serve
CONVENTIONAL METHOD
- Place sugar and mint leaves into blender and process.
- Add remaining ingredients, except soda, into blender (with as much ice as your blender can cope with) and process until smooth.
- Divide mixture amongst glasses and top with soda, to taste.
- Garnish with mint leaves and lime wedges. Serve immediately.
THERMOMIX METHOD
- Place sugar and mint leaves into dry TM and pulverise: 10 sec | SP10. Scrape down sides.
- Add remaining ingredients, except soda, into TM bowl and process: 1 min | SP10 until combined.
- Either divide mixture amongst glasses and top with soda, or set speed to SP4 and slowly pour soda through TM lid to combine. You will need to reduce the speed as the bowl fills with soda, to prevent contents from spraying out of bowl.
- Garnish with mint leaves and lime wedges. Serve immediately.
