Nico’s Thermomix Chicken Stock/Broth

Prepare your own Chicken Stock/Broth in your Thermomix TM6 or TM5 with Nico’s easy recipe. Perfect for using up leftover roast chicken from Nico’s Butterflied Roast Chicken recipe, or use fresh chicken wings instead! Buon appetito!

Nico’s Thermomix Chicken Stock/Broth

(Makes approximately 1.5L)

500g raw chicken wings/pieces (or leftover roast chicken bones cut to fit into Simmering Basket)

1/2 onion, skin on, quartered

100g leek, cut into 70mm lengths

100g celery, cut into 70mm lengths

100g carrot, cut into 70mm lengths

1/2 tomato

1 tsp black peppercorns

2-4 sprigs fresh parsley

1500ml water

TM6 Method

  1. Place all ingredients, except water, so that they tightly fit into Simmering Basket.
  2. Place Simmering Basket into bowl and add 1500ml water.
  3. Set to “Slow Cook Mode” and cook for 2 hours at 98C with MC on.
  4. Remove basket then strain stock through simmering basket or muslin for a clearer stock.
  5. Use within two days or freeze for later use. Add salt as required when using stock in particular recipes.

TM5 Method

  1. Place all ingredients, except water, so that they tightly fit into Simmering Basket.
  2. Place Simmering Basket into bowl and add 1500ml water.
  3. Set to 99min | 98C | Soft Stir | Reverse. 
  4. Once 99min is completed, continue to cook for 21 min | 98C | Soft Stir | Reverse.
  5. Remove basket then strain stock through simmering basket or muslin for a clearer stock.
  6. Use within two days or freeze for later use. Add salt as required when using stock in particular recipes.
