DISCOVER PUGLIA –  Nico and Belinda were delightful, caring hosts throughout our ten days on the “Discover Puglia Experiences” tour!

My husband and I loved getting to know the wonderful group of people on the tour who we were introduced to initially at very useful briefings before departure. We loved everything about the tour… from the luxury hotels; guided cultural walkabouts of different places; of course the fantastic food, including tasty street treats; and classes conducted by knowledgable locals.

We recommend this tour to anyone seeking to take a relaxing, but deep dive into the beautiful place that is Puglia – its food, culture, history and people!…Munira & Malcolm

DISCOVER BALI “OFF THE BEATEN TRACK” – We have recently returned from “Discover Bali off the beaten track “ experience.  We have been to Bali many times but this tour took us to places we’ve never been before, we virtually did a lap of the island. Every detail of the tour was organised by Nico and Belinda, and their careful planning, local knowledge and contacts ensured we got to enjoy a fabulous combination of cooking, eating, sight seeing and relaxing, along with superb accommodation in all locations. DISCOVER VIETNAM – This was my first tour with Nico and Belinda, and definitely won’t be the last! I had been to Vietnam before,  but nothing compares to the benefits of travelling with this wonderfully upbeat and energetic couple. Nico and Belinda somehow combine professional experience,  local knowledge,  humour, and friendship. The carefully chosen boutique hotels were wonderful..a marvellous idea to give us ” executive lounge” access at the first hotel! Great fun was had meeting the rest of the group, and friendships quickly made over free drinks and generous snacks! The included experiences were varied and enjoyable,  and the pace of the entire tour was perfect..a good balance of free time (with good suggestions for activities and restaurants from Nico), and well planned outings and delicious meals. Do not hesitate to go, whether you have already been to Vietnam or not!…Delia

DISCOVER VIETNAM – Seeing Vietnam through the eyes of Nico and Belinda was a wonderfully rich experience. Although travelling alone, I felt comfortable with and welcomed by their interesting group of  my other 12 fellow travellers.  There was ample down time and opportunity to follow one’s own preferences. The very varied core programme suited our different tastes and abilities, aided by Nico’s flair and Belinda’s dedicated behind-the-scenes organisation. I could never have experienced half of what I did without their expert guidance and in-country knowledge. Vietnam was from top to bottom, vividly colourful, engaging, sometimes noisy, sometimes very calm, always fun and historically fascinating. DISCOVER PUGLIA – Memories that will last a lifetime! What can I say, the tour of Puglia with Nico in May 2025 has been amazing. From before the tour starts to beyond Nico delivers! The pretour meet up was casual and informative offering a chance to be introduced to the group. Once in Lecce you are seduced by Puglia. All the way the senses are in overdrive. Cooking, tasting and experience moments of history. Nico is an engaging and experienced host and guide. His knowledge and attention to detail allows you to be immersed into this wonderful part of Italy. It’s more than a taste…. The itinerary is as described with frequent surprises. Planned with optimal food and cultural activities and allowing for time to relax or explore Nico has established relationships with the various providers you will meet. This ensures a special time while visiting the bakery, cooking with the chef or chatting to the staff at the wonderful  accommodation sites. Prior to meeting up with the tour I suffered an in injury resulting in surgery. This was NOT Nico’s responsibility but he assisted me with medical translations and much, much more. I know without his support I would have gone home. I thank him sincerely for giving me the confidence to proceed with my surgery in a foreign clinic and continue with my holiday. He provided much more than expected with grace and professionalism. This is one example of how generous Nico is as a professional and a man. I will be forever grateful….Michelle

DISCOVER PUGLIA – Morning Nico and Belinda! Wanted to express my heartfelt thanks to your company and particularly our amazing tour guide Nico for the wonderful experience I had on the Discover Puglia Tour recently.

Can honestly say I’ve made new friends, and the tour was a perfect blend of everything you need to have a good time travelling – learning local history, sightseeing, eating amazing food, cooking classes, free time to explore (and shop), absolutely beautiful accommodation, great conversations, plenty of coffee and focaccia and even learning a new card game.

I am normally an independent traveler, so it was a real joy to not have to think about the day ahead knowing that Nico had everything planned but was also open to suggestions from the group and changes to the itinerary (including waiting patiently whilst we watched a wedding party arrive instead of our scheduled visit to the cathedral).

Prior to booking this tour I found the proposed Itinerary very detailed and inviting which clinched the deal for me to book – all I needed to bring was good walking shoes and a strong appetite.

I have recommended this tour to friends and am sure some will join future tours to Puglia and perhaps other destinations with Urban Provider. Thanks again…Wendy

DISCOVER VIETNAM – Dear Nico and Belinda, Safely home and reflecting on our Vietnam experience. To parrot you Nico, it was EXCELLENT…We absolutely enjoyed the whole experience, all thanks to you and a great group of travel buddies. So much laughter! Choice of activities and luxury accommodation and food experiences just perfect. The surprise King and Queens feast night was a  big hit! The highlight for us, to choose one, was the scooter ride and street food experience. Amazing to be right in the middle of apparent chaos, to find we were relaxed and felt very safe. Certainly an eye opener for us. You do your work with such passion  Nico, we really appreciate how you make us feel so comfortable .Belinda, so good you could join the group to make it whole, for a quick catch up. DISCOVER PUGLIA – If you are undecided about booking the last few places on the Discover Puglia tour in May 2025, I would encourage you to do so. I was lucky enough to get a cancellation only a few months before the September 2024 departure and am so glad I did. If you have been on tour with Nico & Belinda before, you will know how well organised they are. As Puglia is Nico’s original family home, he is an amazing source of knowledge. Nothing is too much trouble and he was a wonderful support and calming influence while I waited for my suitcase to catch up to me five days after arriving in Italy by myself. The accommodation was varied and all top notch – a delightful small hotel in Lecce old town, a wonderful Masseria in the countryside, and amazing cave hotel in Matera, and a small hotel very close to the historic area of Bari. I’m trying to restrain myself about the food or else I’ll end up writing pages. All the food was delicious. You will discover foods you have not tried before or new combinations of ingredients. One of my favourites was smooth silky freshly made ball of ricotta serviced with tiny pieces of candied celery. DISCOVER PUGLIA – Hi Nico, Here is our review of our magnificent trip to Puglia.  I’m still dreaming of all those dinners  To say a visit to Puglia is a gastronomical must, is an understatement.

If you enjoy food, wine and history, together with fabulous and unique accommodation, then you should definitely join this 5 star tour. We were blown away by the amazing food, history and sheer beauty this region had to offer.

Nico and Belinda researched this tour to perfection to give us, and our group members, the most memorable trip of a lifetime. My husband claims he has now eaten the best meal in his life at a small country restaurant found somehow, by Nico. I claim that all of our food and wine in Puglia were the best we have sampled on any tour.

We can now adamantly say, Italian food and wine is our absolute favourite!

DISCOVER VIETNAM – Thanks Nico for another great tour. This was a repeat tour for all of us and once again we have met wonderful likeminded people who we loved spending time with. Lots of fun laughs and great memories.Highlights of the Vietnam tour for us was an appreciation of Vietnam history and culture. The riverboat tour to the CuChi tunnels, the War remnants museum, and the citadel in Hue were our cultural highlights. We loved the XO bike tour, and the cultural dress up dinner in Hue which was heaps of fun and lots of laughs. Though I am a well-travelled ‘independent adventurer’ I really valued the special extras included (obviously thoroughly researched in advance by Nico) that ensured our shared Vietnam experience was enhanced immensely. DISCOVER PUGLIA – I’ve just returned from a tour of Puglia with Nico and Belinda and would like to say that this small part of Italy is simply amazing!  The old villages are beautiful with so much history, small alleyways full of colour, unique dwellings and even little Nonnas making pasta.   Nico and Belinda have sourced the best accommodation, wonderful cooking schools and restaurants, while allowing plenty of free time as well.  Plus Nico’s knowledge of each place is an added bonus!  Thanks again to you both for a great tour! DISCOVER VIETNAM – Whoever is considering going to Vietnam with Nico and Belinda won’t be disappointed, we went this March 2024 and had a wonderful time, everything was well planned and we both did things that we never thought we would do. So if you are thinking of going we would highly recommend this tour.  Nico and Belinda were fantastic and always gave us suggestions for lunch or dinners on free days but they also always said we were welcome to join them and any other guests, so we were never left not knowing what to do. Nico was an excellent tour guide as well very informative to a lot of the places that we did sightseeing in. DISCOVER PUGLIA – Dear Nico and Belinda…I want to say an enthusiastic “thank you” for the recent “Cuisine and Culture” tour in Puglia, southern Italy. This was my 5th trip with you over the past 13 years (lucky me!), and each has been a memorable and enriching window on the world through the lens of food, wine and authentic cultural experiences.

After the hordes of people in Rome and the Amalfi Coast, it was refreshing to visit the less touristy region of Puglia, and be immersed in its rich history, beautiful architecture and delectable “cucina povera”.

Your local knowledge and meticulous organisation ensured a smooth, hassle-free trip from pickup in Brindisi to departure in Bari.  Our small group of like-minded travellers provided delightful companionship.

Choosing a highlight is difficult. Was it the amazing wine tasting and lunch at Castello Monaci; the impromptu focaccia picnic at Altamura; the evening stroll around cosmopolitan Bari; or perhaps the tuk tuk tour of beautiful Polignano a Mare? For me, it was Gianna’s cooking class and dinner in the beautiful baroque city of Lecce. My attempts at making orecchiette and burrata were far from perfect, but the infectious effervescence, hospitality and passion of Gianna most definitely were! DISCOVER NORTHERN ITALIAN LAKES – After several tours with Nico and Belinda, I am still amazed at the seemingly effortless manner in which they manage to organise each group, whilst always remaining approachable and positive.  Flexibility is a hallmark as both group dynamics and individual needs are met to optimise the experience for everyone.  Each trip is thoroughly researched and Nico’s local knowledge provides opportunities for us to have special experiences not normally on a tour itinerary.

The Italian northern lakes trip last September was rich with exquisite dining experiences, scenic activities and plenty of fun, whilst still allowing for relaxed free time in which we were able to pursue some of our own interests.  Well-chosen accommodation in perfect locations, together with quality transport arrangements, made for a seamless transition between superb destinations.

DISCOVER BALI – I was a group member of the April 2024 Discover Bali “Off the Beaten Track ” Cuisine and Culture experience.  Belinda and Nico have managed to create a vacation experience that is somehow luxurious,  yet also ‘ down to earth. 

I’ve been to Bali several times before, but this tour highlighted areas and regions of Bali I’d never been too, and were thankfully away from the chaos of Kuta. Highlights fir me were the superb accommodations, the delicious food, the massages, snorkelling at BioRock coral conservation project at Pemuteran and the day trip by ferry to East Java to visit a rubber and coffee plantation. I could go on and on!

I highly recommend this tour if you want to experience the beauty of Bali, without the hassle of organising the trip yourself. Belinda and Nuco have it all sorted for you.

DISCOVER PUGLIA – My sister and I joined The “Discovery Puglia Experience” In October 2023. The group was small only 10 of us, to keep it intimate enough, enabling our amazing host and guide Nico Moretti to give it a personal touch. Nico’s character and amazing knowledge to all things foodie in Italy, made for the perfect recipe in creating an amazing experience. We explored the old city streets , nibbling on street delicacies along the way! He took us to places off the tourist trodden track to dine and drink delicious meals. DISCOVER PUGLIA – This was our second tour with Nico and Belinda, and met all our expectations. Our last tour in 2013 was in Vietnam – a fantastic experience. Puglia is not usually part of the Grand Tour of Italy, and we jumped at the chance of seeing this region in the company of Nico, who has family there. Fascinating country, cuisine and sights with a small friendly like minded group and with Nico to save us attempting phrase book Italian! DISCOVER PUGLIA – It’s hard to wipe the smile off your face when you think about this tour. To escape the tourist track that you may find yourself on with larger companies, Nico takes you to his forefathers part of Italy and away from the crowds. The accommodation at Masseria Cervarolo was sublime and then off to Ostuni Brindisi for another visual feast. Include these two wonderful places to stay with sojourns to an ancient olive oil estate, an amazing winery, castles, caves….. oh and the cooking classes. There are a couple of inclusive meals that you will definitely enjoy should you decide to take this tour. This was my 4th tour with Nico and Belinda and my wife’s 5th. All are exceptional private affairs where you are among like minded people. There is no expectation to perform with Nico’s tours, if you wish to kick back and have time to yourself, then you do so. DISCOVER JAPAN – We have not long returned from Niko and Belinda’s first “tour” of Japan. Just leaving aside the trip itself for a minute, a big thanks to Niko and Belinda for a job well done. Not easy organising 10 people to get on and off trains, in and out of restaurants and hotels, but it all went smoothly.

Japan – what can I say. Switzerland in Asia. We loved it. Niko took us to some fabulous restaurants, many out of the way and I am sure on our own we would never have found them.

Japanese food can be challenging, and we ate things we never had before and other things we are still to identify 🙂

Accommodation was first rate, especially in Tokyo at the Peninsula and the ryokan in Kinosaki.

Temples and shrines abound, like churches in Europe. The best were in the bamboo forest in Kinosaki.

We’ll be back to explore further sometime.

DISCOVER TUSCANY – Hey Nico, I had a wonderful time at Villa Fabbroni in Tuscany, such a lot of fun! I really enjoyed the cooking classes, Sergio and Stefano were gorgeous. They were so sweet and it was lovely to get to know them. I loved their philosophy about not wasting anything and just using what you have in the pantry. It makes perfect sense. The sight seeing days were excellent too. Linda, in particular was fabulous and I really enjoyed both Florence and Lucca with her. Using a bus for the going out days was such a good idea. Also the accommodation was excellent, very comfortable and convenient. All in all, a fabulous time. Would love to do another one with you in the future. If you go to Spain anytime or maybe France another time.Cheers, Margie

DISCOVER VIETNAM – Sincere thanks to Nico and Belinda for providing such outstanding planning and guidance for our recent Tour of Vietnam.

The preparation prior to travelling was excellent, with a thorough tour guide outline and also a phone link up prior to our departure, being on the east coast we felt that we were totally informed every step of the way for our trip of a life time.

Our visit to Vietnam was outstanding, every day was planned extremely well with consideration of free time, evening group dinners were such joy with Nico’s guidance but we all had opportunity to select from the menu each evening.  Nico provided brilliant support for the total tour, always with a big smile and with enthusiasm. 

We greatly appreciated the opportunity to visit the local villages and enjoy traditional Vietnamese Pho for breakfast. The standard of the accommodation was first class and thoroughly enjoyed each and every venue we visited. Hoi An was a very special place, just so traditional and pretty. Loved the volume of traffic and people in the big cities and we became very good at crossing the roads.

Our two Vietnamese cooking classes were brilliant, and we learnt so much, came home and already began to utilise our newly acquired Vietnamese cooking skills, our family are delighted.

The whole tour was such joy, with so many things to experience, such variety with dining, tours, cruises, visits to local markets and villages. As this being our first group tour, we give Nico and Belinda our highest recommendation.

This tour was outstanding value for money.

DISCOVER TUSCANY – Ciao Nico, Great to hear you are back safely! I am catching up with Eileen and Yvonne for dinner on Thursday night to swap photos and stories. John and I had an absolute ball on the trip and have been singing your praises all over town. You may have some starters here for the Tuscany trip! Couldn’t fault anything. Amazing food, wine, scenery and a really good group of people. We likened going with you like going with a friend who has done the trip and knows the language. None of the ridgity of a bus tour but with a trip with some structure and much needed guidance. Loved the independence of the car, coming together with the group and the non stop suggestions from you as to possible ‘treks’. Nico you did a fantasic job and we loved your company. DISCOVER TUSCANY – Welcome back Nico!!! Hope you have recovered or recovering from your tiresome trip. Your patience and constant cheerfulness was really essential for the entire operation. I cant imagine the amount of accommodation you have to put up with all our requests and the unexpected bout of illnesses that sprung. Hope you werent too crooked to celebrate your parents anniversary. All my friends, including myself of course, had a really great time in your company and all in the group. It was just wonderful to be amongst of strangers-turn-friends in such a short time. We thoroughly enjoyed the fun and free spirited company in the group. DISCOVER PUGLIA – Buon Giorno Nico, A sincerely HUGE thank you for organising such a spectacular trip to Puglia. I absolutely loved it from start to finish. I have had plenty of friends show a lot of interest in joining you on a future trip to Italy, following my rave reviews. Puglia is indeed a fascinating place and I feel very fortunate to have had the opportunity to visit the region. You were a terrific host as usual Nico (you’ve certainly found your calling)- there was a perfect balance between doing things together as a group and having plenty of autonomy to go off an explore individually. Above all, we had heaps of fun! As an aside, I have to say how much I enjoyed Margaret and Libby’s company. DISCOVER TUSCANY – We would like to extend our sincere thanks to you for organising a wonderful cooking experience to Tuscany. The venue and accommodation was fantastic and so fitting for an old region like Tuscany. Our two host chefs were out of this world. They come with a wealth of experience and were totally unselfish in sharing that experience with all of us. The 8 days was well organised, relaxing and inspiring. We had the time of our lives and it was a very memorable big 50th birthday present for me! We came home and got right into it – made meat sauce, tomato sauce as well as homemade pasta. Please extend our thanks to Belinda as well. I would highly recommend one of your trips to my friends. Not sure if Spain is in the budget next year but if we can we will do something similar again…Trish & Geoff

DISCOVER TUSCANY – Just a quick note to say thank you for the wonderful experience I had in San Polo with you and your group. As a complete stranger, from a different continent, I felt included and welcome in every way. I sit and laugh about not being seen as the 5th wheel and also about convincing me to do the walk down to the bottom of the hill for coffee (even if it was just once) and feeling lucky that I didnt attempt Cardiac Hill. I did manage to smuggle in all the food products I bought from there, and Thomas and the kids have already enjoyed consuming quite a bit of this. I would definitely consider another cooking tour with you again, so please keep me in mind. I have a few friends who are also now very, very keen…Julie

DISCOVER BALI – Having just returned from 2 weeks in Bali, we feel priviliged to have spent a week with Nico and Belinda discovering parts of Bali that we haven’t seen in about 15 previous trips to the island.
Nico’s knowledge of the culture, the restaurant scene along with Belinda’s thorough researching of the spa’s, made for a fantastic holiday.

The Cafe Wayan cooking school along with the Mozaic Restaurant demonstration provided some of the best food in Ubud. The Cycling tour is the first of the 4 previously riden on, that was truely “all downhill” – a fun filled very enjoyable day. The cooking school at Bali Asli with Penny Williams was the highlight of the trip for me. Penny’s skills as a guide and chef along with her respect for all that Bali offers, made the day complete.

The accommodation venue’s – Alam Jiwa (Ubud) and Alila Mangiss (Candi Dasa) were perfect spots to spend our spare time in and along with Nico’s structure of the tour, made the trip an unbelievable time away. Nico’s knowledge of Bali continued to the second week, with he and Belinda going out of their way to visit us and recommend further restaurants they had discovered in Seminyak and Jimbaran. Would definetly love to join them on their trips to Italy, Vietnam or Tasmania in future years…Stewart & Heather

DISCOVER BALI – Recently returned from Nico and Belinda’s excellent tour of Bali, taking in the sights of Ubud and Candidasa. I have been to Bali many times, but this time decided to do something different so joined this tour with some friends. It was the perfect mix of cooking classes, outdoor activities, cultural experiences and cocktail drinking. Thoroughly enjoyed the week, it was well organised with a good mix of group activities, but plenty of time to do your own thing as well. Highly recommended!…Karine

If you’ve been to Bali before, this is a completely different way to experience it – if you haven’t been before, this is a great introduction. This is about the beautiful, the gentle, the relaxing Bali and the food!
Nico and Belinda have done their homework well and provide the group with fantastic experiences and great suggestions on how to spend the free time as well. You can be as much a part of it all as suits you.

DISCOVER BALI – Nico is a superb tour organiser! He has excellent contacts in a myriad of locations and years of experience, which equals an unforgettable holiday. I recently went on the Secrets of Bali tour and feel I have had a unique experience seeing the hidden Bali that many tourists don’t get to see. We trekked to a quiet East Bali village, cooked with a variety of talented chefs, stayed in beautiful and unique hotels and thoroughly enjoyed ourselves. Nico arranges for his groups to dine at the best tables in the restaurants visited and this time one of those tables was in a tropical coconut grove by the ocean.

The tour was well balanced with shared activities and meals and time for individual exploration and relaxation. I love having the security of the group and the activities all planned and organised but still having time to venture out.

Nico’s wife, the lovely Belinda, is nurturing and kind and an authority on spa’s and treatments…take her advice!
