Vietnamese food is one of contrasts and harmony, exploding with the freshness of lemongrass, mint, coriander and basil, while beautifully balanced with the use of chilli, sugar and fish sauce. Influenced by over 1000 years of the rich culinary legacies of China, India and France, Vietnamese cuisine is one of the original fusion cuisines of the world and one which has taken the very best of these other cultures and refined it into its own unique culinary experiences.
