GRILLED CHORIZO & CUCUMBER
(Serves about 30 portions)

This is an easy dish served as an appetizer or while waiting for the BBQ to heat up. Rather than serving the chorizo on bread or biscuits, using the cucumber gives this dish a great freshness, with the cucumber providing a cooking effect to the chorizo. Use an Italian cacciatore if chorizo is not available. (from our "Sex & the City PASSION" class)

  • 1 chorizo sausage
  • 1 cucumber
  • juice of half lemon
  1. Slice chorizo into 3mm slices on the angle.
  2. Slice cucumber into 3mm slices on the angle.
  3. Grill slices of chorizo on grillplate or frypan until lightly browned.
  4. Squeeze lemon over grilled pieces and place a piece on cucumber slices.
  5. Serve while warm
