BRUSCHETTA (The Classic Bruschetta)
(Serves 4)
2 cloves garlic
4 large ripe tomatoes (very red)
4 leaves of fresh basil
pinch of salt & pepper
4 tablespoons extra virgin olive oil
1 clove garlic extra
8 slices of crusty Italian bread
Chop one garlic clove very finely. Dice the tomatoes into small pieces. If the tomatoes have a lot of water inside them you must remove (Place in a sieve to drain). Mix the tomato with the garlic, salt & pepper and olive oil. Set aside for at least 20 minutes. (So the tomatoes absorb the garlic and oil flavour). Grill the bread on the bbq (You can also grill in the oven).Rub the extra garlic on the warm bread. Chop the basil and add to the tomato mixture. Place the tomato & basil mixture onto the warm bread&Buon appetito!
