PASTA BRUSCHETTA (Fresh Tomato & Basil)
(Serves serves 6-8)

This fresh & fantastic ?no-cook? pasta sauce is perfect for that lazy summer weekend meal or as an accompaniment to a BBQ salad. (from our "BBQ PASSION" class)

  • 400g penne pasta
  • 5-6 ripe roma tomatoes (Deseeded and chopped)
  • 2 cloves garlic (finely chopped)
  • 1 red chilli, deseeded and finely chopped (optional)
  • 1 handful basil (roughly torn or shredded)
  • 3-4 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • sea salt & freshly ground black pepper, to taste
  • 3 tbsp freshly grated parmesan
  • 2 tbsp lightly toasted pine nuts (optional)
  • 100g goats cheese, crumbled (optional)
  1. Bring water to boil for pasta.
  2. Add pasta and cook to al dente.
  3. While pasta is cooking, in a large serving bowl combine tomatoes, chilli and garlic and toss with olive oil, balsamic vinegar and salt & pepper.
  4. Drain pasta, once cooked, and add hot to bowl with tomato mixture.
  5. Toss through parmesan cheese and pinenuts and goats cheese (if using)
  6. Serve immediately
