BBQ Christmas Passion
We've designed a menu with all the traditions of Christmas seafood and roasted pork, but with a contemporary twist, that can be prepared in advance and simply grilled up on your hooded BBQ or in your oven.
Prawn & Crab Cakes with Jalapeño Aioli – lightly spiced grilled prawn & crab cakes served with a zesty Jalapeño Aioli. Accompanied by – Green Papaya, Apple & Carrot Slaw.
Cedar Plank Grilled Maple Chilli Glazed Salmon – we’ll show you a great technique for grilling salmon on cedar planks which results in moist and perfectly cooked fillets with just a hint of cedar flavour. Accompanied by – Green Summer Salad with a Citrus Dill Dressing.
Proscuitto Wrapped Pork Fillets with Spinach & Cranberry – a wonderfully easy “prepare ahead” dish of tender pork fillets wrapped in proscuitto and filled with sautéed spinach. Perfect served hot or cold, or part of a Christmas buffet. Accompanied by – Chunky Cranberry, Apple & Walnut Chutney and Balsamic Roasted Vine Cherry Tomatoes and Broccoli Salad.
Frozen Lemon Meringue & Strawberry Layered Torte – another refreshing dessert for a hot Christmas day that can be prepared up to 2 weeks beforehand. Layers of baked meringue, filled with lemon curd and finished with strawberries for the perfect finish to Christmas entertaining.
