With a selection of favourite dishes, as voted by our clients in our “Best of” Survey in December 2005, selected from our various Passions classes, we’ll travel from Asian to Morocco and beyond, so that you can add a number of different dishes to your repertoire, from some of our favourite Passions classes!

Cooking Passions with Nico Moretti.Fresh Vietnamese Rice Paper Rolls – with mildly spiced mince chicken, cucumber, carrot and fresh mint & coriander with sweet chilli dipping sauce

Tiger Prawns & Kaffir Lime Butter “al cartoccio” – Tiger prawns flavoured with kaffir lime butter and wine, wrapped and grilled with carrot and leek.

Tagine of Chicken with Ras el hanout, Chickpeas & Raisins – braised chicken with the famous Moroccan Ras el hanout spices, honey, chickpeas and raisins.

Roast Pumpkin & Almond Couscous – roast butternut pumpkin, almonds & coriander mixed through fluffy couscous.”

Smashed” Herb Baked Potatoes – Crispy baked potatoes spiced with fennel seeds.

Raspberry, Chocolate & Torrone Semi-Freddo – A refreshingly decadent berry semi-freddo with nougat, chocolate & raspberries, served with a raspberry coulis.
